We have partnered with a luxury resort in Coastal Georgia to source an experienced Banquet Chef and Chef de Cuisine. This role offers an exciting opportunity for a culinary leader to elevate the resort's dining experiences, bringing creativity and expertise in coastal cuisine to a high-end setting. The ideal candidate will be responsible for working with the Executive Chef in regard to menu development, team leadership, and ensuring the highest standards of quality and presentation, making a lasting impact on the resort’s culinary reputation.
Key Responsibilities
- Recipe Management: Maintain a file of recipes, including ingredients, portions, and preparation/presentation directions.
- Menu Development: Assist in developing menus, recipe cards, and specifications.
- Portion Control: Set standards and methods for portion control for each dish on the menu.
- Quality Control: Ensure all recipes are followed exactly and consistently.
- Inventory Management: Monitor inventory daily to ensure proper levels and quality.
- Cost Management: Manage food and labor costs within budgeted guidelines.
- Staff Training: Arrange training for staff on the proper use and cleaning of equipment and supplies.
- Team Meetings: Assist with organizing kitchen meetings at least once a month.
- Performance Management: Participate in performance appraisals and progressive discipline as required.
- Staff Development: Assist in developing and coaching staff.
- Cleanliness and Organization: Maintain kitchen cleanliness and organization standards.
- Daily Walkthroughs: Complete daily walkthroughs of the kitchen areas.
- Food Cost Tracking: Assist in tracking food costs and completing monthly inventory.
